Mint chocolate chip ice cream

420 g | half and half |
72 g | milk |
pinch | salt |
70 g | power sugar |
mix and bring almost to boil
add
5 hand full of mint leaves, washed, crushed a bit in a mortar
let sit for 25 min
drain leaves out, get maximum amount of milk out of left over leaves
prepare
2 table spoons of corn starch 3 table spoons of milk
mix well,
add to milk mixtures, heat until it thickens. let moisture evaporate during that process (no lid)
cool mixture down (I kept stirring and used a water/ice bath for faster cooldown)
add
1/2 tea spoon vanilla extract
put in ice machine
shortly before end, add
112 g chocolate chips
result
outcome:
right after: nice and smooth, no butterfat noticeable, mint flavor OK (not too strong), perhaps too much chocolate? perhaps a bit too much corn starch?
